If you manage a local restaurant or food service establishments, you know about FOG and the work required to manage it.

Restaurants and other food service establishments generate a lot of Fats, Oils, and Grease (FOG), which if allowed to drain to the sanitary sewer, could form blockages and cause wastewater to back up into homes and businesses or spill into storm drains and creeks.  

Grease traps, interceptors, and other grease control devices are used to keep FOG out of the sewer. City ordinances require these devices to be regularly serviced, and maintenance records must be kept onsite and available for inspection. When FOG Inspectors inspect a food service establishment, staff must provide these maintenance records at the time of inspection. Failure to do so may result in violations and fines.

Restaurant managers are busy people. Wouldn’t it be nice if there were an easy, secure, no-cost way to manage these records?

This past September, the San José Environmental Services Department launched a new a free online service called SwiftComply. This innovative digital compliance tool allows all San José food service establishments with grease control devices to easily manage their maintenance records online.

Using SwiftComply eliminates the headache of managing records, reduces the number of inspections at your facility, and ultimately will protect against plumbing blockages.  

• It’s Easy! Upload records on your computer or mobile device or have your service provider do it for you.
• It’s Secure! Your records are confidential and viewable only by you, your service provider, and City FOG Inspectors.
• It’s Compliant! Completed records uploaded to this service are compliant with section 15.14.650 of the San José Municipal Code. Your FOG Inspector can review your compliance without inspecting your facility. If an issue arises, we’ll work with you to resolve it, saving you time.
• It’s Free! Store your grease control device maintenance records online at no cost to your business.

Nearly 200 San José establishments have already said goodbye to the old ways of keeping paper records and said “Yes!” to this free and easy service. A local restaurant manager commented on the new service, “Once you have access to your account profile, it is easy to use. I would recommend other establishments to join. I think this would help with keeping their records together.”
